Tasting Class Notes

If you missed our live class, here is some information to help you experience your own tasting class with the box kit provided by Yelibelly CHocolates.

Unboxing

In your tasting kit you have:

  • 2pc Chocolate Covered Oreo - our most addicting little confection. Enjoy or share

  • 6pc box of Bonbons and Truffles - Flavor infused chocolate made at Yelibelly. There is a map on the back of the box that will show you the flavor in each bonbon.

  • Tasting Samples - This mini box contains single origin chocolates from all over the world. Some will be labeled with origin information like Madagascar or Venezuela along with the % of cacao in a bar. Chocolates 50% and under are milk chocolate. Those over 50% are dark chocolate.

  • Samples of cacao beans. These are completely edible and are the rawest form of cacao (where chocolate comes from) that we can eat. Peel or snap off the shell to taste this bitter sweet bean.


Where to start

  • Start with the lowest % of cacao, which would be the white chocolate.

  • Lay out your next dark pieces with milk chocolate and ending with the dark chocolates.

  • The Grey and/or Green labeled chocolate disks say “Chocolate Whisky Disks” on it. They do NOT contain any whiskey. They are for PAIRING with whiskey, scotch and dark wines. The Grey is a milk chocolate from Hawaii and the Green is a semi sweet dark from Ecuador.

  • Most of the tasting occurs with the single origin samples. You can enjoy the bonbons and chocolate covered Oreos on your own.


How to sample

  • The first rule (and the hardest one to follow) is don’t chew your chocolate

  • Take a bite of the chocolate or drop one of the disks on your tongue. Close your mouth and let the chocolate start to melt.

  • Move the chocolate around in your mouth and breath in and out through your nose.

  • On your exhale, you will find that flavor adjectives come to mind like, sweet, creamy, caramel and more!

  • Relax and let your brain talk to you and figure out what the different flavors are that naturally occur in your single origin chocolate. Take notes on your tasting mat if your choose.
